Stuffed brinjal in Microwave

In most kitchens, the microwave is a re-heater and a defroster. But there are ways to coax out delicious flavors and textures that you'd swear came from an old-fashioned,gas top.
Today i am here with an interesting recipe of stuffed brinjal that i learned from my Facefook freind Sabita shenoy with a little twist here and there.

stuffed brinjal in microwave

10 small sized purple brinjal
2 Big onions,chopped
3tsp Red chilly powder
1tsp Dry mango /amchoor powder
1tsp Garam masala
2tsp Coriander powder
1tbsp Ginger -garlic paste
A Pinch of sugar
Salt to taste
3tbsp Oil
1tsp lemon juice
Coriander leaves for garnishing
  • Wash the brinjal thoroughly under tap water and make four slits from opposite side of the stalk .Do not cut them fully.Now leave them in a salt water for 10-15 minutes.
  • Now prepare the stuffing by mixing all the ingredients and stuff the brinjals with this masala.
  • Take a microwave safe glass bowl and add oil and micro on medium heat for 1 minutes
  • Now arrange all the stuffed brinjal at a proper distance and sprinkle half of the coriander leaves and micro for 5-6 minutes.
  • Take it out and slowly  turn all the brinjals,sprinkle some water and lemon juice,cook again on medium heat for about 5-6 minutes depending on the size of the brinjal
  • once done garnish it with freshly chopped coriander leaves and serve hot with chapati or roti
  1. It can also be cooked completely on fire using nonstick pan or griddle but it should be on slow fire and takes little more time ie about 20-25 minute
  2. If there is an excess of onion masala, put it on the top of brinjals before cooking.

Microwave "Chocolate -Orange Marie Fudge"

Today is a special day! It is my 300th blog post! Last week i have celebrated my blog's 1st anniversary and now I'm excited for how far it has come in this short time! I've met so many blog friends, sealed wonderful memories, and learned much about myself and others. I'm super excited for what is coming for this little blog, this year... 300 more blog posts? :P

 Ok lets celebrate once again with this dark chocolate fudge, easy and quick to make.This ideal for a party or even as a dessert if served with a dollop of fruit and nut ice-cream or you can try it with two different flavour.
Prep time: 20-25 mins
Cook time: 10-12 mins ,depending on the microwave
Yield: 12 medium pieces


  • 1/2 cup Grated bitter chocolate
  • 1 cup All purpose flour/maida
  • 1/2 cup Veg oil
  • 1tsp Baking powder
  • 1 cup Sugar
  • 1tsp vanilla essence
  • 1tbsp Butter
  • 2 Egg yolks
  • 12 Marie biscuit (orange flavoured)
  • 4-5 Cherries
  • 2tsp Tutti frutti
  • 1/4 cup Milk
  • 1/2tsp Salt
Cooking Directions
  1. Grease microwave oven proof dish with butter and keep aside.
  2. Now make coarse powder of marie biscuits using your mixer grinder.
  3. Put butter and chocolate, in a heatproof medium bowl set over a pan of simmering water; stir until butter and chocolate are melted. Let cool slightly.
  4. Whisk together flour, baking powder, and salt in a separate bowl; set aside.
  5. Put sugar, eggs, and vanilla in the bowl of an electric mixer fitted with the whisk attachment, and beat on medium speed until pale, about 4 minutes.
  6. Add chocolate mixture, beat until combined.
  7. Now add milk and flour mixture, alternately beat, scraping down sides of bowl, until well incorporated.
  8. Pour batter into prepared pan; smooth top with a rubber spatula. Microwave, uncovered, on high for 6-7 minutes, or until a moist area about 1-1/4 in. in diameter remains in the center (when touched, brownie will cling to your finger while area underneath will be almost dry).
  9. Take it out and mix powdered marie bisuit and again keep it back in the oven for 6-7 minutes or leaves the sides of the dish.
  10. Garnish with cherries and tuttifrutti and serve cold with Fruit and nut ice cream or plain orange flavoured ice cream also goes well with this fudge.
If your family loves the crunch of nuts add some chopped nuts before baking .

Baked fish stuffed with eggs

A quick and simple baked fish served with stir fried veggies.I have baked this fish with little mustard oil and coated with bread- corn flakes crumbs..a healthier way to get crispy tasty fish. I have used mostly mild white fish like Pomfret with great results. Don't be scared by the number of ingredients it is mostly vegetables and herbs. Please adjust the spices, especially salt, to your taste. I have tried to post a balanced blend here but feel free to adjust mild, spicy, lower sodium etc...
Prep time: 40 mins
Cook time: 30-40 mins
Calories per serving: 256.8
Fat per serving: 3.2 g

  • 2 Medium sized Pomfret or any flat fish
  • 3 Hard boiled eggs
  • 1tbsp ginger-garlic paste
  • 2-3 tsp Chilly powder
  • 1tsp Garam masala
  • 1 tsp Lemon juice
  • 2tsp Mustard oil
  • 1/2tsp Turmeric powder
  • 1tsp Crushed black pepper
  • 3tsp Finely chopped coriander leaves
For stir fried vegetables
  • 2 Potato (cubed)
  • 1 Carrot ( cubed)
  • 10 Shallots
  • 4 Spring onion bulbs
  • 1 Green capsicum( diced)
  • 1 Red capsicum ( diced)
  • 1tsp Light soy sauce
  • 1tsp Pepper
  • 2tsp Olive oil
Cooking Directions
  1. Scale and clean the fish.The fish is served whole, so trim the fins and the tail portions first.
  2. Slit the stomach horizontally, carefully clean the stomach contents from the cavity,wash it thoroughly.
  3. Marinate the fish with turmeric,salt,lime juice and Mustard oil. Refrigerate for 2 hours.
  4. After 2 hours,make the second marinade by mixing ginger-garlic paste,chilly powder and garam masala powder.
  5. Now apply this marinade to the the fish and leave it for 30 mins.
  6. In the meantime boil cubed potato,carrots and shallots till half done with little salt and keep aside.
  7. Preheat oven at 180 C/350 F" .
  8. Slice eggs and season it with pepper and salt.Sprinkle some fresh coriander and our stuffing is ready.
  9. Now Stuff the Pomfret with boiled egg slices
  10. Mix whole wheat bread crumbs with corn flakes crumbs
  11. Brush the fish with lightly beaten eggs and then sprinkle some white
  12. flour/maida, Dredge fillets in crumb mixture and place on a lightly greased baking sheet.
  13. Bake for 35 minutes or until fish is golden brown and the fins come off easily when pulled,its done. This will take 30-40 minutes, depending on the size of the fish.
  14. Toss red and green capsicum , spring onion bulbs and boiled vegetables with olive oil and soy sauce. Season with salt and freshly ground pepper to taste.
  15. Serve fish together with the vegetables.

Eggless Beetroot cake/beet cup cake ( microwave)

Couple of days back i prepared this eggless  beet cake for one of my veg-food group in FB.I chose beet because that days theme was beetroot so wanted to post some unique dish out of beetroot and thought of baking some cake and to save my time i baked in the microwave.It was so easy and really very tasty. First i prepared some cup cakes and then one small cake.Both the cakes come out really well.

Maida/all purpose flour-11/2cups
Baking Powder-11/2 level tsp
Baking soda-1/2 heaped tsp
Salt -1/4tsp
Beetroot grated-1cup
Vegetable oil-1/2cup
Melted butter-1tbsp
Butter milk-1/2 cup
Cashew nut chopped-2tbsp
Tutti fruitti -2tbsp
Beetroot grated-1tsp for garnishing 
Cinnamon powder-1tsp
Nutmeg powder-1/4tsp
Vanilla essence-1tsp

  • Sieve maida,baking soda,baking powder,salt and cinnamon powder and keep aside.
  • Grind beetroot to a  smooth paste  using butter milk and vinegar in a mixer grinder or you can use a hand blender too
  • Then in the same jar add sugar and blend it again until sugar dissolves completely.
  • Now add oil and melted butter blend it again for few seconds until creamy.
  • Now take out this beetroot mixture into a wide bowl and add vanilla essence and  powdered ingredients little at a time in 3 batches and fold it gently into this mixture.Once you are done transfer the content to greased microwave safe bowl( i have used 9"bowl) and garnish it with some grated beetroots and nuts cook in micro on high for about 10 minutes or until done(cakes starts to come away from sides of pan).
  • You can make some cup cakes  instead with the same batter.cook on high for about a minute in micro or till done.

Instant chocolate brownie ( microwave)

My son was after me to bake some chocolate cake for him.So instead of cake  i made this gooey  Instant chocolate brownie for him.This is very easy and quick to make in the microwave.I really liked the texture,nice gooey  chocolatey  and my son is very happy to see this :) ..This is instant brownies as i have used marie biscuits just to try something quick and easy... . I have seen so many instant brownie recipes but never tried one but this is an absolute delight .

Marie biscuit-25(Coarsely powdered)
Sugar-3/4 cup( powdered)
Unsalted Butter-1 cup( melted)
Roasted almonds,cashew nuts and walnuts-1cup(slightly crushed )
Cocoa powder-1cup
Baking powder- 1/2tsp
Tutti fruitti -2tsp


  • Take melted  butter and sugar in a bowl and beat it well until sugar dissolves completely and the mixture becomes smooth and creamy.
  • Mix in milk and baking powder and  cocoa powder blend it well.
  • Now add marie biscuit powder and fold it in the mixture.
  • Grease the microwave safe dish and sprinkle some maida.
  • Now pour the mixture to the dish and add the nuts and tutti fruitti
  • Microwave on high(100%) for 3mins and then 2 mins on 90% power.
  • Let it stand for 2 mins in the microwave.
  • Now its ready to serve.
  • You can serve it hot or cold with vanilla ice cream or chocolate sauce
Serving suggestion:
serve with chocolate sauce or with plain vanilla ice cream

Stuffed Capsicum( Microwave)

This capsicum dish is very simple and easy to make.As it is a microwave dish it takes only few minutes to cook.  In this dish i  hav used a drop of oil , which makes a perfect diet food and for those who doesn't like  spicy food. 
           Come summer and i start hunting for simple and quick  recipes,so that i don't waste too much time in the kitchen.

Stuffed capsicum

Capsicum- 8(medium)
Potato- 4(grated)
Carrot- 1(grated)
Paneer(cottage cheese)-1/2cup(grated)
Chilly powder-1/2tsp
Sambar powder-1/2tsp
Garam masala-1 tsp
Salt to taste

  • Micro the grated potatoes for 3mins using 1tbsp of water in a micro safe bowl covered with a lid
  • In the mean time clean and cut the capsicum from the top. Remove all the seeds and preserve the caps of the capsicum  for later use.
  • Now take out the potatoes  from the micro and mix some grated carrots,chilly powder,sambar powder, garam masala powder,asafoetida,grated paneer and salt to taste.Mix all the ingredients well and  keep aside.
  • Now stuff all the capsicum with this stuffing and cover it with cap
  • Arrange  stuffed capsicum in a microwave safe bowl and microwave on high for about  7- 8 mins or till done.
  • serve hot with rice or roti.

Note:- Same dish can be steamed in a steamer for about 15 mins or till done.

Eggless Banana - Walnut Cake

On the occasion of International Women's day i baked this cake for the second time.This time i baked this for  Two beautiful women in my life... my 2 daughters Prajnya and Prithvi.I am baking this cake for the 1st time and it really came out  well Both of them loved it so much that they started fighting for the last piece..
after a week again Kids requested me to bake a cake for them to take for their school picnic. Initially they let me decide on what I wanna bake but next day, they came back with the requested by their friends . They want the banana cake .So I went ahead to bake this beautiful banana walnut cake in micro which i have baked few days back ...I really gland that they still can remember how delicious this cake was even it had been a year and also after tasted so many of my baking :).

Maida-2 cups
Sugar-11/2 cup
Over ripe banana-2 medium
Walnut-1/2 ( chop roughly)
Raisins-1tbsp( soaked in rum)
Baking powder-2tsp
Baking soda-1 tsp

  • Grease  10" Microwavable dish and keep aside.
  • Now mix curd ,baking powder,baking soda and mashed banana in a blender and keep aside.
  • Now combine sugar,melted butter and warm milk and blend it well till the sugar dissolves.
  • Now mix the curd mixture and sugar mixture well.
  • At last add  maida and gently fold it with a spatula.
  • Now transfer the batter to a greased microwavable dish and sprinkle walnut and raisins.
  • Now Microwave high  for 9 mins or untill done.
  • Remove from the microwave and let it cool before de-moulding..
